Roast Pork Quesadillas
Ingredients
8 slices dill pickle
8 flour tortillas
4 oz. ham, thin slices
4 oz. roast pork, from deli
4 oz. Swiss cheese, part-skim
cup mustard sauce
Directions
Turn the grill on at medium. Place the tortillas on a plate and spread mustard sauce on one side. Now take 4 tortillas and spread the rest of the ingredients on them. Take the other 4 tortillas and place them on top and press firmly. When the grill is ready, place the quesadillas on top and cook for about 2 to 3 minutes on each side. When the cheese begins to melt, place them on a cutting board and cut slices. Serve with sour cream and salsa.
Bacon-Jalapeсo Poppers
Ingredients
25 jalapeсo peppers
16 oz. cream cheese
2 cups cheddar cheese
2 packages of bacon slices
Directions
Preheat the oven at 450 °F. In a bowl, mix cream cheese and cheddar cheese together. Cut the stems off the peppers and make a slit to cut them halfway. Make sure you don’t cut the peppers all the way. Remove the spicy seeds from inside and refill the pepper with cheddar and cream cheese mix. Wrap the bacon slices over the peppers and place them in a greased baking dish. Place the dish inside the oven and bake for 15 minutes. Once the bacon is completely cooked, remove from the oven, and wait for 5 minutes before serving.
Baked Turkey-Pork Wontons
Ingredients
1 Ѕ teaspoon ginger, ground
1 onion, chopped
1 package wonton wrappers
1 can sliced water chestnuts, drained & chopped
Ѕ lb. pork, ground
Ѕ lb. lean turkey, ground
1/3 cup low-sodium soy sauce
cup egg substitute
Cooking spray
Sweat & sour sauce
Directions
Preheat the oven at 400 °F. In a skillet, we will cook pork, turkey, and onion together. When the meats turn pink, remove from the skillet and place in a bowl. Add water chestnuts, egg substitute, soy sauce, and ginger in it and mix properly. Place the wonton wrappers in a plate, covered with damp paper towel. Take one wrapper and point one end towards you and add 2 teaspoons filling in the middle. Fold the wrapper to bring all 4 ends in the middle. Take a little water to moisten the top and press so that the wrapper seals properly. Do the same thing with all the wrappers. Place the ready wontons in a baking dish and into the oven to bake for about 10 to 12 minutes. In the middle, turn the wontons once. When the wontons turn golden brown, remove from the oven and serve with sweet and sour sauce. This is one of the best finger foods for parties.
Crispy Pita w/ Parmesan
Ingredients
5 whole wheat pitas w/ pockets
3 tablespoons olive oil
Ѕ cup Parmesan cheese, grated
teaspoon red pepper, ground
teaspoon cumin, ground
Salt, for taste
Directions
Preheat the oven at 350 °F. In a bowl, mix red pepper and cumin powder with olive oil. Cut the pita in half and spread the oil mixture on one half. Then cut each half in 8 equal wedges and place them on a baking sheet. Keep the oiled side facing up. Now sprinkle Parmesan cheese and salt on top and place the sheet inside the oven for about 10 to 15 minutes. In between, rotate the pita once and remove when they begin to turn brown. Let them cool down on a cookie rack. Serve the crispy Parmesan pita wedges with yogurt dip or sour cream.
